June! My favourite month of the year. A month full of promise and anticipation. The promise of stretchy days and sun-soaked evenings. The anticipation of sandy toes, salty beach hair, and daily tomatoes on toast.
Months of summer joy lie ahead. To herald the start of such joy, I suggest we turn to strawberries. Punnet upon punnet of them, eaten straight up, held by their leafy green caps.
Once you’ve had your fill of fresh strawberries, or if the fresh are a little less than perfect, consider roasting them.
If you haven’t roasted strawberries before, you’re in for a treat. It’s a transformative process, resulting in fruit that tastes quite radically different from its fresh counterpart: intensely perfumed; jammy; and, when coupled with lots of lime, distinctly sherbet-y. Spooned onto thick, cold labneh, this is a pudding for June - a pudding for the most joyous of months.
