Complaining about being tired is surely one of the most dull, tedious complaints and I have been doing far too much of it recently - apologies to the friends and family who I must have bored to death by now.
In an attempt not to bore you in the same way, I won’t dwell on my tiredness but instead offer twirl-able respite in the form of the recipe below, should you happen to be feeling the same way.
The sauce is not, in a fact, a sauce - or at least not at first - but a thick, concentrated paste. Once loosened with lots of starchy pasta water and tossed more times than you may think necessary, it coats and clings to the pasta in a very particular way that I find “classic” tomato sauces often fall short on. The quantities given below make extra paste which can be jarred and kept in the fridge or freezer for a future rainy day, either for pasta or in another guise. It would be delicious smeared on fish fillets (a flaky white fish would be my suggestion for this), stirred through yoghurt as an instant dip, loosened with lemon juice to dress boiled potatoes, or used as a jumpstart base for a pilaf.
With a little chopping and stirring, followed by plenty of tossing and twirling, I hope this may help with February fatigue.
